Easy Delicious Donuts

Salam everyone, I hope you are all well.

I never thought making donuts could be as easy as 1, 2, 3, I’ve tried this recipe many times and loved it each time. The following recipe truly is amazing and most off all easy. It would take no longer than 30mins from start to finish. The best thing about this recipe is that you only require two ingredients. YES you read it correct!😄. Well what are we waiting for, let’s hop to it😁

Ingredients

190g Plain Yogurt

140g Self raising flour (or 140g plain flour with 1 1/2 tsp baking powder)

Method

Add the two ingredients in a bowl

Combine well with a spatula or spoon

The consistency of the mixture will be rather thick

Add the mixture into a piping bag (snip the end)

Heat oil to fry

Once the oil heats up, squeeze out in small amounts (1inch at a time), use a pair of scissors to gently drop them into the oil.

Fry until lightly golden brown

Place them on a paper towel to drain the excess oil

Let it cool whilst you prepare your favourite coating/frosting for the donuts.

I am sure you are going to love making these, I loved it so much, mostly because I could get my 5 year old daughter involved without worrying about the mess she will make.😂 . Less ingredients +little child = less mess (call it baking together)😂!

Apple Banana Crumble Muffins

Apple Banana Crumble Muffins

Salam everyone. I really hope you are keeping yourselves busy and productive, physically and mentally.

Remember to keep your little tots occupied with productive activities instead of being glued to the screen .

My husband and I were starting to worry when we saw the fruit basket, surely there were no chance for the Apples to make it for another week. They were on the verge of rotting. My husband told me to do something with them. My daughter and I decided to make this yummy Apple and Banana crumble Muffins.

Ingredients

12-15 Medium size Muffins

3 Apples

1 Banana (you can add 2)

1 Large Egg

1/2 Cup Milk

1/3 Cup Vegetable Oil

160g Flour

150g Sugar

1/4 tsp salt

2 tsp Baking Powder (Alternatively use Self raising Flour)

1tsp Vanilla Essence (optional)

For the Crumble

1/2 Cup Flour

1/2 Cup Brown Sugar

1/4 Butter (Cold)

1 tsp Cinnamon Powder (optional)

METHOD

1. Preheat oven to 180C

2. Make the muffins: In a bowl mix milk, oil, egg and vanilla.

3. In a separate bowl, combine flour, baking powder, sugar and salt.

4. Peel the apples and banana

5. Cut Apples into small chunks and slice the banana.

6. Add the Apple chunks and banana slices into the flour mixture and mix and coat well.

7. Pour the wet mixture into the dry mixture and mix until combined.

8. Scoop the batter into muffin cases, leaving enough space for to top with crumble.

9. Make the crumble: Add the flour, butter. Brown Sugar and Cinnamon. Combine using fingers until it becomes crumbly.

10. Add some crumble on top of each muffin batter.

11. Bake for 25-30 minutes, until a knife inserted at the center comes out clean.

12. Place on cooling rack for about 10minutes and enjoy. Don’t forget to share

Super Quick Choc Frosting

Quick Chocolate Frosting

For larger quantity you can double or triple the recipe but be sure to add the milk gradually as it thickens up very quickly.

Prep Time: 5 minutes

Total Time: 5 minutes

Quantity: about 1/2 cup

Ingredients:
1 cup Icing sugar
2 tbsp softened butter
1 tbsp unsweetened cocoa powder
1/2 tsp vanilla
3 tsp milk

Method: Add icing sugar, butter, cocoa powder, and vanilla into a bowl.Use an electric mixer on low, combine for a few seconds.Slowly beat in the milk, add little at a time, until it’s frosting consistency.Beat on high for about 30seconds

And ta-da! It is ready, yummy I love it so much couldn’t wait to eat with cake so I started ahead and started eating the frosting lol. I haven’t met anyone who loves chocolates as much as myself.

Excuse the mess, I had my almost 9 month old on one hand and I wasn’t fussed about frosting the cake, just wanted to splodge some frosting on the cake and gobble it down. All finished in 1 and a half day.

Fluffy Pancake

Whether you call it pancakes, crepes or any other name you will surely enjoy this recipe. Quick and easy with simple ingredients.

Ingredients

1/2 cup Flour

1 Egg

1 cup Milk

1tbsp sugar (optional)

Big pinch of Salt (or to taste)

2 tbsp Butter (1tbsp for the mix, rest for the pan)

Method

Add all the ingredients in a bowl and mix well

Leave the mix for 5 minutes

At times I make the mix in the night to make it the next morning, turns out great MashaAllah.

Last veggie bite standing

My 4 year old daughter is a very fussy eater, she needs lots of flavour in her food, bland is not in her dictionary, just like her dad😉. Yep! It is a mission getting her to eat. I found this yummy recipe on instagram. To be honest it wasn’t yummy enough for my daughter but my husband and I enjoyed them so I gave myself a pat on my shoulder😅. I did tweak the ingredients slightly from the original recipe, I added salt and ginger garlic paste and next time I will try and add some meat or more pepper or other spices to give that extra bit of flavour for my little madam. By flavour I don’t mean she loves spicy, uh oh! if her food is spicy that means I’ve pushed her ‘tantrum button’😏😣. All kids have this button right? Well if your child doesn’t then wow you must have an angel, congratulations😂.

This recipe is ideal for snack time or even lunch or dinner, its healthy and yummy. We had ours for a light lunch

Ingredients

1 cup broccoli
1 1/2 cups cauliflower
1 cup grated cheese
1 cup breadcrumbs
2 whisked eggs
Pinch of Ginger garlic paste
Chopped fresh Parsley
Black pepper to taste
Salt to taste

Method

Preheat the oven at 180°C

Line a baking tray

Boil the cauliflower and broccoli florets until a little soft

Roughly chop into small pieces

Put all the ingredients into a mixing bowl and combine.

Shape into tots or patties and put on a lined baking tray.

Pop into the oven for 15-20 minutes.
This made about 20 bites but some were different size as my daughter did them.

Serve with cheese and maybe some mayonnaise. Hubby ate his with mayonnaise and chilli sauce as you don’t qualify to be an Asian if you don’t add chilli to your food😅.

Butter Cake Recipe

I find this to be the most simplest and easiest cake recipe which I learnt from my mum, my in-laws also use the same recipe.

Ingredients

250g Butter
250g Flour
250g Sugar
4 Eggs
2 tsp Baking Powder
2 tsp vanilla essence or essence of choice
1/2 cup milk

Method

Mix sugar and butter well

Add eggs

Add flour gradually

Add the rest of the ingredients and mix well

Bake at 180 degree celsius for about 30 to 40mins. You know your cake is ready when you stick a knife through the cake and the knife comes out clear

Bake and Enjoy also don’t forget to share it with others😁

Chocolate Frosting

My 3 year old’s cupcake decorations

Ingredients

½ cup butter at room temperature

½ cup unsweetened cocoa powder

2 cups Icing sugar

1 tsp vanilla essence

¼ cup cold milk add as required

firstly, in a bowl beat the butter

then add cocoa powder, powdered sugar, vanilla essence add cold milk.

beat till the mixture turns smooth and spreadable.

Simply mix all ingredients in a bowl until you have a smooth consistency.

Tuna Panini Filling

Assalamu alaikum

If you are a foodie and prefer a variety for meals or even a filling snack then you might enjoy a bite of Tuna filled Panini.

Great for picnics, outings with family or just for work lunch.

Equally enjoyable and fulfilling for the hungry stomachs of young and old

Ingredients

1 tin/ 112g Tuna Chunks

1/2 tin sweet corn

1 Green Chilli

2 Medium sized Red Onions

Pinch of salt

Pinch of pepper

3 tbs Mayonnaise

Cheese (optional)

Tomatoes (optional)

Method

Tuna Mix:

Empty the Tuna chunks in a bowl (without any water/brine)

Add Sweet corn as much as you prefer

Add finely chopped green chilli and red onions

Add salt, pepper and mayonnaise and mix well.

1. Slice the Panini bread through the Middle

2. Place it on a stove at medium heat, turning each side until warm, keep for longer if you prefer it to be slightly crispy.

4. Place the Tuna mix on the Panini and top it with cheese of your choice and cover with top half of the panini

And ta-daa you are ready to munch instantly or pack it for later

If you are not a Tuna person like me then it can always be replaced with meat or cheese and other vegetables.

Panini filling recipes are endless so fiddle around with the ingredients and make a filling of your taste.

It was a mission making this, as it was my 3 year old daughter’s idea to make a chocolate cake for her Abu for one of her imaginative idea of pretend play, this time it was “Eid Party” so we had to bake a cake.

After giving birth to my second child (by the mercy of Allah) a month and a half ago, I haven’t had the chance to spend quality time with her. My toddler gets bored quickly these days as the cold weather creeps in and she’s stuck inside the house hence I’ve had to sacrifice more of my sleep and utilise that time with her, despite the constant screaming not to make a huge mess I do love the fact that I am able to give her some of my time and attention Alhamdulillah. Trust me it is not easy, some days are better than others and somedays you are beyond exhausted and just want to leave everything as it is and have a nap but this is a recipe for partial disaster because chores will just pile up, but hey it isn’t the end of the world.

I love chocolates and so does my daughter, my body craves for chocolatey goodness a bit more than hers therefore I had the largest portion of this cake in the house (shhh don’t tell anyone).

For the love of chocolates let us start with the mouth watering recipe already

Ingredients (1 cup = 255ml)

1 cup condensed milk / milkmaid
¾ cup unsalted butter at room temperature
1½ cup plain or all purpose flour
3 tbsp cocoa powder
¾ tsp baking soda
1 tsp baking powder
¼ tsp salt (exclude if using salted butter

¾ cup warm milk add as required
¾ tsp vanilla essence

1 tsp vinegar

Method:

Add condensed milk and butter in a bowl and beat until consistency turns smooth and fluffy.

Sieve all the dry ingredients into the mixture: cocoa powder, baking soda, baking powder and salt, then fold gently

Add vinegar, vanilla essence and warm milk.

Gently mix until consistency is smooth

Transfer into a baking tray and bake for 35-40mins at 180 degree celsius.

Let it cool down completely before adding frosting.

Don’t mind the decorations as I said it was a mission getting it done with a toddler

Chocolate Brownies

Ingredients

200g Sugar
150g chocolate
100g Butter
100g Flour
3 Eggs
2tbs cocoa powder

Method

Preheat oven to 180 degrees
Butter an 8inch baking tray and line with baking paper

Add butter and chocolate in a bowl
keep the bowl over a pan with simmering water until both ingredients melt
Remove the bowl from the heat and add cocoa powder and sugar and whisk
Add in the eggs one at a time and whisk
Add the flour and whisk

finally pour the mix in the pan and bake for 25 to 30mins or until its done
