Broccoli Salad

Whether you are a lover of greens or not, specially broccoli, I know many who are not a fan of it but I assure you will fall in love with broccoli after trying this recipe.

I love it, as I am not one who enjoys veggies but this recipe makes me feel healthy so now I can sing “eat your vegetables they are crunch crunch yummi bunch” 😉

First time I tried it without steaming the brocoli but it had the raw smell. I prefer to do with steamed brocoli.

Ingredients:

Brocoli (no specific amount)
Decicated coconut (optional)

1 1/2 Tomatoes (diced)

1-2 Red onions (chopped into small pieces)

1-2 Green chillies

Lime juice (to taste)

Salt (to taste)

All ingredients are completely adjustable to your taste preference, e.g. if you are a spicy person then add more green chillies or add pepper powder etc.

Method:

Wash the broccoli thoroughly with salt water

Boil for 5mins (entirely upto your liking, you can increase the time until the brocoli gets tender or decrease the time just to get rid of the raw smell) *[refer to notes below]

Drain well

Chop the brocoli flower into small pieces

Add all the ingredients to your taste

Mix well

And enjoy

*Nutritionists recommend: in order to maximise the amount of nutrients in the vegetables that you consume, cook them for a short amount of time with a small amount of water with low heat to absorb the maximum amount of nutrients.

Eating vegetables at all, boiled or not, is something to be happy about.

At the end of the day, your food needs to be palatable to you. It’s more important to consume fruits and vegetables cooked and prepared the way you enjoy them than it is to be overly concerned with their bioavailability and nutrient loss due to cooking.

My Labour story

Assalamu alaikum.

Bismillah

Fasten your seatbelts and enjoy a bit of ranting at the start as I feel its needed. Honesty may help others, revealing how I truly felt and how I overcame and back to life may help mothers who are made to feel guilty for not being adaptable to motherhood as soon as they concieve and even sooner after birth.

Yes! labour is scary and traumatising and you’ll say to yourself I’m never having another baby, eventually you get over it and forget the hardship you went through.

No! everything doesn’t get rosy between you and your newborn afterwards, you will begin to wish you hadn’t complained during pregnancy. Now you can say goodbye to sleep and say hello to zombie face, with an almost broken back and you begin to think your back bone is melting away, eyes may fall off anytime and your neck too. Yep you guessed it I wasn’t the most patient of person in my early 20s (that’s making me sound so old 🤣), age really was just a number with a mentality of a teen, outwardly I may have portrayed myself as otherwise. Almost forgot to mention to top everything off you will be greeted with mum bashing aunties😑, this is in almost every culture you just have to learn to nod your head up and down or left and right and try not to take it to heart but it could have an effect on your mood and make you feel like a bad mother, so long as you have a handful of positive people around, you will get through it inshaAllah.

It was 3 days into my maternity leave from work when my water broke, trust me I had no idea what or how it was going to happen and don’t worry if you are pregnant for the first time, you will know when your water breaks inshaAllah.

I was admitted to hospital on the evening of Friday and gave birth Saturday morning, labour was just over 11 hours.😅 It really was a testing time for me, each time I had my contractions I would feel a little angry would think in mind to shout “why Ya Allah, why?” Thinking back at it now I am so thankful to Allah for protecting my tongue of uttering such unpleasant and regrettable words that do not befit Allah’s majesty and wisdom. You really are not yourself when you’re in labour! SubhanAllah. As soon as I had the baby my head was spinning and felt gassed and found things funny due to the pain relif I took ‘Gas and air’ to be precise. I rememeber laughing when they had to transfer me to the wards on a wheelchair, and my husband looked worried and I was thinking why is he not laughing lol. After things settled down and evening time approached, that meant my husband had to leave I rememeber trying look all well so I could be discharged and run home. My goodness I hate hospitals and appointments, unfortunayely they had to keep me in over night due to losing too much blood. I also tried to make my husband hide behind the curtains so he could stay with me. I felt very emotional that he couldn’t stay with me. Anyway I was alone the night with very little sleep and feeding most of the time, a midwife out of kindness offered to keep the baby for a while for me to get some sleep, that shook me and I froze and replied politely “it is ok I am fine” and I wasn’t fine I was desperate to sleep. I thought to myself no way am I letting my baby leave my sight.

Fast forward to next day and due to be discharged we were elated to just get out of the hospital, being in a hospital could make me become depressed lol. The first week was a nightmare subhanAllah baby cried all night, I cried with the baby too and all 3 of us were up most of the night and we were in and out of hospital due to the weight of baby. Nonetheless Alhamdulillah we got through it with the help of Allah, my husband and family. It didn’t get any easier after that, challenges were kept being thrown on to my plate, I had patience over some of the challenges and would over react at others.

Now after 3 and a half years I absoluey love and adore my little girl. Motherhood is challenging, emotional and special, most of all it is important to realise our children are an Amana (trust) from Allah.

Surah Luqman, Verse 14:
وَوَصَّيْنَا الْإِنسَانَ بِوَالِدَيْهِ حَمَلَتْهُ أُمُّهُ وَهْنًا عَلَىٰ وَهْنٍ وَفِصَالُهُ فِي عَامَيْنِ أَنِ اشْكُرْ لِي وَلِوَالِدَيْكَ إِلَيَّ الْمَصِيرُ

And We have enjoined on man (to be dutiful and good) to his parents. His mother bore him in weakness and hardship upon weakness and hardship, and his weaning is in two years give thanks to Me and to your parents, unto Me is the final destination.

Alhamdulillah ‘ala kulli haal. And surely after every hardship comes ease.

Surah Al-Inshirah, Verse 5 -6:
فَإِنَّ مَعَ الْعُسْرِ يُسْرًا

So verily, with the hardship, there is relief,
إِنَّ مَعَ الْعُسْرِ يُسْرًا

Verily, with the hardship, there is relief (i.e. there is one hardship with two reliefs, so one hardship cannot overcome two reliefs).

Moral of my story is that whatever you go through during pregnancy and few years into motherhood you will get through it inshaAllah, just try and be optimistic and realise everything is in Allah’s hands, therefore all connections with Allah must be strong to feel ease in your mind, heart and soul. Trust me it helps a lot subhanAllah. I don’t know what I would do without Allah and Islam in my life. Alhamdulillah thank you Ya Rabb.

Burj Khalifa Dubai

Another iconic place not to miss if you ever visit Dubai.

Burj Khalifa. It is the World’s tallest Tower. It is a 828-meter skyscraper with viewing deck, restaurant, hotel and offices.

It is next to Dubai mall and Dubai dancing fountain. To be honest when I first saw it from afar I thought it was over rated and the hype over it was a bit too much but as we went near and in it all that changed. I couldn’t believe I was in front of it and got excited and also shattered at the end of a long day in the heat 😆. Despite all the walking, I loved it and enjoyed it. It was a beautiful experience and it is not everyday that you get to live like a tourist lol. As a tourist enjoy as much as you are able to physically and financially of course (my husband’s moto) 😁. Alhamdulillah for all the blessings in our lives.

Trip to Cornwall

We stayed at a fantastic four bedroom holiday home. Trust me pictures match the reality, and the property was absolutely wonderful.

Tamarind was the name of the property with views over Whitsand Bay and the English Channel.

Did I mention how much I love beautiful scenery, sea view is one of my most favourite. Pictures come out stunning MashaAllah TabarakAllah

Lands End Cornwall

Lands End is one of Britain’s most famous landmarks. Whether you just want to see spectacular coastal views or walk the cliff tops to see how the Land meets the sea, you will find a moment of serenity. Enjoy the gushing waves hitting the cliffs causing it to erode slowly and all your eyes could see is shimmering blue watet under bright blue skies. It is a place to visit.

How can one not be awe struck by such perfect and magnificent beauty. And even more so of the one who created it SubhanAllah. Allah Al Khaliq – Allah the Creator

أَلَا لَهُ الْخَلْقُ وَالْأَمْرُ تَبَارَكَ اللَّهُ رَبُّ الْعَالَمِينَ

Surely, His is the Creation and Commandment. Blessed be Allah, the Lord of the ‘Alamin (mankind, jinns and all that exists)!

[Surah Al-Araf, Verse 54]

Dubai Dancing Fountain

If you ever visit Dubai the dancing fountain is a must visit. Captivating water dance.
Dubai Fountain is the world’s tallest performing fountain. At over 900 ft in length – equivalent to over two football pitches – The Dubai Fountain is situated on the 30-acre Burj Lake and performs to a selection of different melodies. The fountain has a unique design comprising five circles of varying sizes and two arcs, and features powerful water nozzles that shoot water up to impressive heights.

Snowdonia Wales

Sea sides and mountains are some of the cravings my mind encounters at times in respect to nature. Hence we went to fulfil this mountain filled dream whilst being almost 6 months pregnant. I guess one of my pregnancy cravings, trust me I am getting this often during this second pregnancy. Just the other day I was craving to be in Dubai lol😂.

As we emerged into Snowdonia with breathtakingly spectacular views of the sea to our right and mountains on the left and in front of us as far as the eye can see.

One thing crossed my mind, there can only be one supreme being behind these magnificent creation SubhanAllah.

Surah Al-Baqara, Verse 164:
إِنَّ فِي خَلْقِ السَّمَاوَاتِ وَالْأَرْضِ وَاخْتِلَافِ اللَّيْلِ وَالنَّهَارِ وَالْفُلْكِ الَّتِي تَجْرِي فِي الْبَحْرِ بِمَا يَنفَعُ النَّاسَ وَمَا أَنزَلَ اللَّهُ مِنَ السَّمَاءِ مِن مَّاءٍ فَأَحْيَا بِهِ الْأَرْضَ بَعْدَ مَوْتِهَا وَبَثَّ فِيهَا مِن كُلِّ دَابَّةٍ وَتَصْرِيفِ الرِّيَاحِ وَالسَّحَابِ الْمُسَخَّرِ بَيْنَ السَّمَاءِ وَالْأَرْضِ لَآيَاتٍ لِّقَوْمٍ يَعْقِلُونَ

Verily! In the creation of the heavens and the earth, and in the alternation of night and day, and the ships which sail through the sea with that which is of use to mankind, and the water (rain) which Allah sends down from the sky and makes the earth alive therewith after its death, and the moving (living) creatures of all kinds that He has scattered therein, and in the veering of winds and clouds which are held between the sky and the earth, are indeed Ayat (proofs, evidences, signs, etc.) for people of understanding.

 

Below is a picture of Zip World, Penrhyn Quarry, Bethesda

Exhilarating zip ride soaring 500ft above the vivid blue of the quarry lake at 100 miles. It is the longest and fastest zip wire in the world. I didn’t go on it obviously but watching people go on it brought shivers down my spine. I was praying they all reach the other end safely.  😉

Beautiful view from top of Mount Snowdon

This is a beautiful lake which can be seen ones you reach the peak of mount Snowdon via steam train. Beautiful view but freezing weather and breathlessness due to high altitude, had it been summer time, it may have been slightly bearable, with clear blue skies and more breathtakingly beautiful views.

Desert Safari Dubai

Regardless of whether you are feeling adventurous or not, you must not miss the Desert Safari. Absolutely brilliant, adventurous, thrilling and fun experience.

You will enjoy dune bashing, it is a very rough ride in the desert, dinner and entertainment. I must admit though I only enjoyed safari itself due to entertainments having music and after dinner they had belly dancing, which of course we didn’t stay for lol. You can choose to leave early straight after dinner or stay in the tent without watching the entertainment.
